Growing Tips
  • Plant certified seed potatoes, not grocery store potatoes
  • Hill soil around stems as plants grow
  • TWO harvest windows: (1) NEW POTATOES — small, tender, thin-skinned. Ready when plants FLOWER (~60-70 days). Dig gently from the side of the hill; take a few and leave the rest growing. Eat within a week; do NOT cure or store. (2) STORAGE POTATOES — full-sized, thick-skinned. Wait until the plant TOPS DIE BACK naturally (~90-120 days). THEN cure in a dark, dry spot at 50-60°F for 2 weeks before storing. Pre-cured potatoes spoil fast.
  • Don't expose harvested potatoes to light — they turn green and develop solanine, which is bitter and mildly toxic
